Hey there! It’s been a bit since we’ve chatted, hasn’t it?
Life has changed since the last time I published a post. Even then it seemed strange to me to be talking about brownies while we were stocking up our pantries and watching everything shut down.
I’m sure we’re sharing some of the same issues, but not all. Our family is dealing with its own challenges, but so far, we’re staying healthy. I hope you are staying healthy too.
So, I’m not going to do a deep dive on the hopes, fears, joys and disappointments we face. (I could devote a whole separate blog to that.) We know the struggle is real. And honestly, we’re all pretty much inundated with the 24 hour news cycle anyway, not to mention our social media feeds.
No. We’re here today because we enjoy reading about food, looking at pretty pictures of food, talking about food or making food. So, the only thing I’ll say on the subject of current events is this….it’s been hard to find flour. If you bake at all, I know you know this.
Absolutely everyone is baking! So…..everyone’s out of flour. On line…in the store. And suffice to say I’m not going out daily to see if I can hit it just right when it’s delivered to the store.
No regular supply of flour means I can’t bake very much…at least any recipes that require flour. I was able to get a couple of bags a few weeks ago, but I am rationing that find for a future cake I need to make. So, developing and testing recipes until I get them just right isn’t really happening right now. At least ones that require flour.
Worse yet, I like to use unbleached flour, and then only certain brands of flour, so that poses an even greater challenge. I passed up one last lonely bag of bleached flour on the shelves this week. I may regret that later, but we’ll see how it goes.
For instance, I have been experimenting on and off with pizza dough, still trying to develop my perfect recipe. That used quite a bit of flour :/ I’m going to have to put that project on pause for a while until I can score more ingredients. And for that, once I land on the perfect crust, the type of flour I use is going to be important.
I’ve got some other recipes to share in the coming weeks. So, no worries. The blog marches on. We’re low on flour, but we’ve got toilet paper! So that’s a win, right? I mean, if you’ve got to choose something to be out of… ;)

When you add goat cheese and herbs to simple scrambled eggs, they become something special...creamy, cheesy, tangy. Fresh herbs add wonderful flavor. A side of toast and you're ready to eat!
These are like sticky buns but with the added glory of bacon and a no rise, no yeast scratch made biscuits as the base. I served these once to a group of friends and the whole pan was gone in minutes.
The recipe is one of the most popular recipes on the site this year and an easy one as well. It all happens in the oven, so no mess. Lay out the bacon and let the kids help with the brown sugar and maple syrup. Perfect for sweet and salty lovers!
So, if you can bare not to eat all of that luscious bacon, save a few strips and use them to top off these muffins. The muffins are sweetened with maple syrup instead of sugar...plus you get maple in the glaze. Chop up a bit of bacon for the top and you've got one impressive muffin, my friends.
I fashioned this recipe after chocolate chip pecan cookies. This is another easy one for the kids. Basically mix up a bunch of stuff, then bake. Add chocolate. Customize with your favorite flavors and mixins. Serve with some yogurt and fruit or layer it in a parfait for a simple, but pretty breakfast.
This is another reader favorite. It's the most popular muffin recipe by far. These are soft and tender muffins that taste like strawberry shortcake. Love them!
I love crumb cake. I love chocolate chips. I love sour cream coffee cake. This recipe hits all those notes. Just do it. You'll love it. The kids will love it. Mom will love it.
Another crumb cake, but this one is bright with lemon flavor and rich with ricotta cheese. I used buttery shortbread cookies for the crumb topping. So good!
The hardest part of this recipe is zesting and juicing a few oranges. You don't have to wait for butter or eggs to come to room temperature because you're using olive oil. It tastes like an orange pound cake but it's lighter than that. Better yet, no frosting necessary. It's breakfast, after all ;) Just a sprinkling of confectioner's sugar and a good cup of coffee and tea is all this cake needs.
If you want to treat Mom to pancakes from scratch, this is your recipe. It makes a nice batch of fluffy pancakes. Of course, feel free to add favorite mix ins like fresh berries or chocolate chips. Don't forget the syrup!
These Oatmeal Chocolate Chip Banana Pancakes make for a hearty, whole grain breakfast. They taste like banana bread, but in pancake form. Add chocolate chips and top with Walnut Syrup for a special treat! (That walnut syrup is ridiculous!)
Forgive the photo. This recipe is from the early days, but it's an important one to have in your pancake arsenal. They are not like the fluffy buttermilk pancakes above. These have a totally different texture and are just like some famous diner pancakes I've had. Make them and you'll see what I mean.
Don't feel like flipping pancakes? Make pancake cobbler! Just pour the batter into a pan and bake with some blueberries. Then, just slice and serve. Done and done!
