My original plan was to post these 13 No Bake Dessert Recipes back when we were smack dab in the midst of a 100 degree heat wave. That was the week that I didn’t want to turn on any kind of heat in the kitchen and tried to get through meals with as many salads as possible.
Even though it’s not 100 degrees here in the Northeast today, there’s plenty of hot to go around this summer. Why turn on the oven when you can make a whole bunch of summer fun desserts without it?
Am I right? Ask my husband. I’m always right 😉
Let’s kick this list off with some nice, chilly ice cream choices…
No Churn Nectarine Ice Cream. If you can whip cream, you can make ice cream! Fresh fruit and just three ingredients make this delicious frozen treat! This is for you peaches or, er, nectarine and cream lovers :)

No Churn Cinnamon Ice Cream. Three ingredients and no ice cream maker necessary. I usually make this one in the fall, but who says you can’t have cinnamon ice cream any time you want it? This is a fun choice to pair with fruit pies and yummy with chocolate cake!
Seaport Salty Swirl Ice Cream. We start with a delicious vanilla ice cream base. Then, we load it up with all kinds of yummy things like chocolate covered pretzels and peanuts. Then, it’s swirled with salted caramel and peanut butter sauces. Seriously, it’s the best ice cream I’ve ever made. And yes, you will have to get out the ice cream maker for this one, but it is soooooooo worth it! Great for the sweet and salty lovers! And texture freaks? You’re gonna love it!
Ultimate S’mores Ice Cream. Over the top flavor from real roasted marshmallows, creamy dark chocolate ganache and tender graham cracker crust! My husband says this is the best ice cream he’s ever tasted. Ever. I guess my work here is done :)
Mini Vanilla Ice Cream Cookie Sandwiches. A super easy, quick and fun frozen treat with endless flavor possibilities! These are so fun to make and they are delicious! I give you four fun combos to get you started. But, be creative! You can make all kinds of combos ahead of time and stash them in the freezer. Makes a quick dessert for one or a group.
Mini Ice Cream Cookie Sandwiches, Part 2. I was so excited about the Mini Vanilla Ice Cream Cookie Sandwiches, I had to try another version. This recipe uses cream filled cookies as the base for creating mini desserts in your favorite flavors! I chose to make cookies ‘n cream, birthday cake, mint chocolate chip and pistachio versions, but the possibilities are really endless especially with all the flavors that sandwich cookies come in these days…
10 Minute Buttermilk Caramel Sauce Round 2. This rich, buttery caramel sauce comes together in minutes. It’s hands down the sauce I make most often and you’ll see it drizzled over more than a few posts on the site. It’s really amazing. Once you see how easy it is to make, you’ll think twice about buying just any ole caramel sauce from the store. DO IT!!!! (Round 2 has been updated with step by step photos. Fresh Sweet Cherry Sauce. An easy one pan sauce, made with fresh cherries and citrus. Delicious warm or cold on top of sweet or savory dishes! The gorgeous color kills me! Check out the post and you’ll see how it turns just a simple scoop of vanilla ice cream into such a pretty, pretty dessert!
Chewy Hot Fudge Sauce. This is the hot fudge that gets gloriously soft and chewy when it hits your ice cream. Never sticky, just perfectly delicious! I. LOVE. THIS. SAUCE. One of the photos in the post shows how it solidifies into a soft and chewy spoonful of yum. You’re going to want to spoon on seconds. Trust me.
No Bake Ice Box Cannoli Cupcakes. Easy, one bowl ricotta filling is layered with vanilla wafers, topped with whipped cream, chocolate shavings and a cherry! Just make your filling, layer it up with cookies and stash it in the fridge. The cookies absorb the moisture from the filling and become cake like. I like mine with extra filling :)
Ice Box Raspberry Chocolate Chip Cheesecake. Easy, no bake, creamy cheesecake filling and fresh berries give a new twist to a no bake retro favorite. Plus, c’mon…they’re downright fancy, aren’t they?
Strawberry Lemon Pound Cake Trifles. Triple citrus pound cake is layered with a no bake lemon curd cheesecake filling, fresh strawberries and whipped cream! Okay…so I made the pound cake from scratch and baked it in the oven.
BUT….YOU can skip the baking and take a few short cuts. I promise not to tell. Just pick up a ready made pound cake and some prepared lemon curd at the store. Once you add the homemade filling and whipped cream, no one will ever know you took the easy way out.
