St. Patrick’s Day is just days away; Easter and spring celebrations are on the horizon. So, I’ve pulled together a Spring Recipe Round Up of seasonal favorites to help inspire some delicious spring baking and cooking. I also have a terrific giveaway opportunity from HelloFresh! But first, let’s begin with some of my St. Patty’s day favorites…starting with…chocolate :)
Chocolate Stout Cupcakes filled with Irish Cream– These cupcakes are insanely good! The cake is chocolatey, moist and dense. The ganache is shiny and fudgy. The filling is creamy, cool and flavored with Bailey’s Irish Cream. More than a few who have tried these said they were the best cupcakes they’ve ever had!
Chocolate Stout Cake Crumb Truffles– These are the super easy treat you get to make with the leftover cake crumbs and ganache you’ll have from making those insanely good Chocolate Stout Cupcakes. Yep, you get two treats from one recipe!
Irish Soda Bread– This is my favorite recipe for Irish Soda Bread. Sour cream and egg add moisture and a little richness that make it more like a tea cake than a traditional bread. I love it sliced thick and toasted, then spread with salted butter. This is an easy recipe to make. Don’t miss out!
Irish Soda Bread Scones– This was my latest post, but in case you missed it…It’s based on my favorite Irish Soda Bread mentioned above, but in scone form. Yes. Buttery, delicious scone form. Do it.
Orange Buttermilk Pancakes with Fresh Citrus Syrup– These are a delicious change from plain buttermilk pancakes. I love the refreshing flavor from the juice and zest of fresh oranges. They are fluffy and tender and the syrup is the perfect partner to highlight the citrusy flavors.
Herbed Goat Cheese Scrambled Eggs– This is an easy way to jazz up your scrambled eggs. Fresh herbs and some goat cheese will take your eggs from every day to holiday in just a few minutes.
Lemon Thyme Olive Oil Cakelets– Olive oil cakes are some of my favorites. They are always moist and full of flavor. If you’ve never paired an herb with cake, you’ll be surprised how nicely they marry and make for a lovely spring sweet.
Lemon Lime Cream Slab Pie-This is a great choice for a spring get together. Cool, creamy lemon and lime filling sits atop a sweet vanilla wafer crust. Perfect pie for a crowd or divide the recipe in half and make a lovely 9″ tart.
Herb Roasted Potatoes-This is one of the easiest ways to prepare potatoes. No peeling, just wash, dry and toss with olive oil and your favorite fresh herbs, then roast. Use tiny potatoes and they will be like a healthier version of a tater tot!
Pineapple Coconut Glazed Carrots– Pineapple and coconut give a tropical twist to classic glazed carrots. You can get your fruits and veggies in one beautiful and easy to make side dish.
