It’s a new year and I’ve got a new post for you…Classic Banana Bread.
I know it’s not the most likely first of the year posts, being that this is the time of year that everyone is embarking on healthy resolutions. But hey, I’ve lightened up this recipe a bit and it’s whole grain, so it’s not like I’m offering up a hot fudge brownie sundae in the first week of January. (Yeah, sorry about conjuring up that visual, especially if you’re munching on carrot sticks while reading this ;)
At the risk of sounding cliche, I’m starting the year with my on going philosophy…everything in moderation. Hopefully, that’s… Continue reading
Let’s start planning a holiday breakfast with these Egg Nog Crumb Muffins!
I’m kind of done talking about cookies. Okay, maybe not done, but I finally finished all of my cookie baking, or at least I think I have. It’s always such a big feat to get through baking a ton of cookies. It seems like a giant mountain to climb each year. It’s a fun climb, but a climb none the less. Just as I finish, though, I start wanting to bake more, because now I’m only thinking about the latest new recipe I want to develop. One more recipe seems like “nothing” after conquering a long… Continue reading
What’s better than waking up to some warm Blueberry Cream Cheese Muffins?
I remember waking up as a kid, becoming slowly aware of the aroma of hot fresh baked blueberry muffins wafting into my room. I loved blueberry muffins and I knew that smell anywhere. I would lie there thinking, “Are those blueberry muffins I smell or am I dreaming?” Then, I would leave my comfy bed with both reluctance and anticipation because I had to confirm that hot muffins were definitely on the horizon.
I love all muffins, but blueberry might be my favorite. I don’t know if it’s the gorgeous color of the berries and the… Continue reading
Fluffy Sweet Cornbread. Could be a little controversial, since there seem to be two camps when it comes to cornbread…
There are those who like their cornbread sweet and “cakey” and those who like theirs savory and more “bready.” I really do like cornbread of almost any kind, as long as it’s not dry, but my favorite will always be Fluffy Sweet Cornbread. For me, it’s just fluffy enough without completely crossing over into a true cake texture. And, I definitely prefer my cornbread with some sweetness. I think it might be due to the food I eat with it. For instance, I love Fluffy Sweet Cornbread with… Continue reading
Are you a “fruit in bread” lover? You know, like cinnamon raisin bread? If not, please avert your eyes…
Everyone else? Come in a little closer, because do I have a treat for you! Shortcut Stollen! Yep…the flavors of traditional stollen all in an easy to mix up and bake recipe!!! This bread is so delicious I want to sing it from the mountain tops! It just tastes like Christmas, with all its buttery, citrusy almond flavors.
So, I’ve been working on these Whole Wheat Buttermilk Banana Nut Muffins since February.
They didn’t start out as this exactly. I was just bent on developing a great banana muffin. I first mentioned them in my Dutch Apple Pie Muffin post, because a banana muffin was the recipe I was planning to make that day, until my reserved ripe bananas ended up in a post work out smoothie. Since then, I’ve made at least 6 or more attempts at a great banana muffin. The problem is, we don’t always have over ripe bananas hanging around, so the planets have to align on the day I want to make the… Continue reading
What is it about powdered sugar that too much is never too much?
You know I don’t like things over the top sweet, but these Powdered Sugar Jelly Doughnut Muffins could be double or triple dipped in powdered sugar and that would be “A-okay” with me.
French Crullers are my all time favorite and my dad would always make sure there was one or two of those in the box when he brought doughnuts home for breakfast. But then there were those Hostess Powdered Mini Donettes…if there was a bag of those around, then my brothers and sisters and I would devour them, all the while making sure we covered… Continue reading
Fact: There is no cherry soda in this bread. But there is chocolate…
This bread is based on my beloved Irish Soda Bread. I decided to mix it up a bit with some new flavors and came up with Chocolate Cherry Soda Bread. Yep. Chocolate bread, the bread I actually thought existed when I was a kid.
I remember the first time I saw my mother buying a loaf of pumpernickel. (You know where this is going.) I looked at it and thought, “What?!? What is this marvelous dark chocolate brown bread? Oooh, can I have a slice?”
I was so ready to sink my… Continue reading
This non-traditional Irish Soda Bread has become a tradition in our house.
Did you know there’s a Society for the Preservation of Irish Soda Bread? Spoiler alert…this recipe does not preserve the tradition (gasp!) Don’t get me wrong. I like a traditional Irish Soda Bread, especially if it’s homemade. Most of what you see sold in stores has already strayed from tradition and quite frankly, is never terribly appealing to me anyway. They just seem like heavy loaves of bread that have been hanging out in their plastic bags too long. I’ve bought them, but they’ve been dry or the texture and flavor weren’t what I… Continue reading
Here’s the story behind these Dutch Apple Pie Muffins.
They were supposed to be banana. I’d been working on a banana muffin recipe and there were a couple of really ripe bananas left that I publicly claimed for that purpose. Then we all came home from the gym that night and my husband made smoothies… before I could remind him that I needed those bananas.
So, no banana muffins for us today :( But I still wanted to play around with a muffin recipe, and I had some apples, so I thought, “Let’s make apple crisp muffins!” The whole idea was to make an applesauce muffin,… Continue reading
