Do you celebrate Cinco de Mayo? There’s an historical significance to the day and it has nothing to do with food. Really. It’s about a Mexican army’s victory over the French in the Franco Mexican War.
In the U.S., though? It’s basically become a celebration of Mexican culture. It’s also a great opportunity to have a party, drink margaritas and eat good food. Can’t argue with that.
And for most of us, it’s a fun time to bring out our, shall I call them, “Mexican inspired,” dishes? Call it, “Tex Mex.” Call it, “Southwestern.” Call it all the recipes that feel like they were inspired by food you get south of the border.
I’m not going to shout, “Authentic” here. But, I am going to shout, “Delicious” Let’s start with breakfast…
Breakfast Enchiladas Suizas –Scrambled eggs, sausage and Monterey Jack cheese are wrapped in corn tortillas and baked in a green chili sour cream sauce. The sour cream sauce is delish! Oh, and if you don’t want enchiladas for breakfast, stuff the tortillas with cooked chicken (or veggies), cheese and onions and enjoy it for dinner!
Pico de gallo-An easy fresh salsa that has the extra bonus of avocado. It’s the perfect dip/topping for salsa and guacamole lovers! When I make it, I swear people want to just eat it with a spoon!
Jalapeno bean salsa-Lightly sweet with a bit of heat, this salsa gets recipe requests every where it goes! It’s a great make ahead recipe.
Grilled corn salad– Grilled corn, tomatoes, peppers and scallions tossed with cilantro, lime, salt and pepper. Great as a salad or side dish! It’s best with fresh grilled corn, but you can sub frozen or canned if you need to.
One Pan Southwestern Quinoa– All the flavors you love wrapped up in a quick, super easy, hearty and healthy one pan meal! Great for Meatless Monday!
Southwestern Egg Rolls with Creamy Avocado Sauce-A lightened up vegetarian egg roll that’s baked instead of fried and dipped in a delicious avocado sauce. Oh, and the avocado sauce is something you’re going to want to slather on everything!
Kale Sweet Potato Black Bean Quesadillas-These are chock full of veggies and paired with an unexpected, but delicious light and creamy barbeque dip. The dip is literally two ingredients! Super easy! Incredibly tasty!
Cilantro Lime Rice-Fresh cilantro, fresh squeezed lime juice, a bit of salt and olive oil. A perfect addition to your southwestern inspired meals.
Fluffy Sweet Cornbread-A quick and easy one bowl recipe that makes a delicious, sweet, fluffy and moist cornbread! Great with chili; yummy with eggs for breakfast!
Strawberry Tres Leches Cake-This recipe takes the classic combo of strawberries and cream to a whole new level. Berries are a perfect match for this rich and creamy cake!
Pineapple Coconut Tres Leches-A twist on the classic made with coconut milk, a layer of crushed pineapple and topped with toasted coconut! And yes, I love every kind of tres leches!
Mayan Brownies-Ground cinnamon, cinnamon chips and cayenne gently warm this deliciously spiced brownie. Fudgy cinnamon infused ganache tops it off! One of my new favorites! The spice really enhances the chocolate on your palate.
Dulce de Leche Brownies-My favorite brownie recipe amped up with creamy caramel rivers of dulce de leche. These are so good, I’ve seen people sneak back for thirds. And yes, you can totally cheat with a box mix.
Chocolate Chip Dulce de Leche Bars-Creamy, sweet milk caramel, baked between chocolate chip cookie dough. Add pecans for turtle lovers! Amazing as is or heat them up and serve with ice cream for a delicious ooey gooey dessert! Yep, that’s right, the caramel and the chocolate get all melty and wonderful…*swoon*
No Churn Cinnamon Ice Cream-Just three ingredients and you don’t even need an ice cream maker. This would be so good on top of the Mayan Brownies… or any brownies, really. You could even call it, “Churro Ice Cream,” just for the day, if you think it makes it more festive;)
