Avocado Toast

Have you tried Avocado Toast yet?

I discovered the whole idea of Avocado Toast around 3 years ago, although I am not the one who came up with the idea.  I’m not sure who was the first, but food bloggers everywhere have jumped on it since and created so many different and tasty variations.  It’s been one of our favorite “go to” breakfast items for quite awhile now. If you love avocados, you must try this.  My kids will actually swoon when they find out that we’re having Avocado Toast for breakfast. I feel like a superstar because they are avocado eaters.

Like cilantro, I didn’t fall in love with avocados as a kid.  My fondness for avocados probably started when I had some amazing guacamole on a trip I took many years ago to Mexico.  Even then, I don’t think I was full on in love. (It might have been the two week stay in the hospital when I got home that took the shine off anything I ate on that trip. Clearly I consumed something that I shouldn’t have…)

Then, when I was pregnant with my first child, my OB told me her pregnancy craving was avocados and she just couldn’t get enough.  I didn’t understand that craving, since I was craving caramel apples and pumpkin pie :) (I didn’t have either of those treats until after I gave birth…and then, I didn’t really want them anymore.  Funny how that works.)

I’m sure my love for avocados had more to do with Chipotle and the fact that we’ve eaten there a million times since 2005.  My Chipotle bowl just wouldn’t be the same without that scoop of guac on the top.  But we’re not mixing a bowl of guacamole today. We’re just going with our favorite version of a basic Avocado Toast.

We start with good bread, toast it and lightly spread on some salted butter. I don’t think many use the butter, but it’s really good, so yes, for us, it’s not the same without it.  Then the avocado goes on, cubed, sliced or mashed, it’s all good.  Finally a squeeze of lime juice and a sprinkling of coarse salt and we’re good to go.  If I have cilantro on hand, which I did the day I shot this, I’ll chop some up and add it as well.  Of course, once avocado, lime and salt are involved, you can pretty much keep adding stuff (eggs, bacon, tomato, cheese, etc..) and it will taste amazing.

But on a busy morning, when I’m trying to get a hot breakfast on the table fast,  I just scramble up some eggs, throw a piece of avocado toast on the plate…

and wait for the morning cheers :)  (Full disclosure…the kids are actually cheering today because it’s a snow day…)

Avocado Toast

Avocado Toast

This really isn't a recipe, but I thought I'd list what you need to make this delicious toast!

Ingredients

  • toasted bread, I like to use a peasant bread or other crusty artisan bread for this
  • salted butter
  • fresh avocado
  • fresh lime
  • coarse salt, like kosher
  • cilantro, optional

Instructions

  1. Spread a small amount of salted butter on hot toasted bread.
  2. Slice, mash or cube a fresh avocado and place onto toast. We usually use a quarter of an avocado for each piece, sometimes more.
  3. Squeeze fresh lime juice and sprinkle salt on top of avocado.
  4. Add chopped cilantro, if desired.

So the other day I was having a pedicure and a strawberry farm worker walked in (I live in San Diego where the strawberry fields are abundant). He had a bag of avocados, tangelos and a flat of strawberries he was selling door to door. I bought them all. The avocados are small enough for one portion and so good this time of year. I have been making avocado toast for the last five mornings on German Black bread. Excellent! Love your blog, Ramona!

I'm jealous of the abundant strawberry fields! Or maybe it's that you can get your toes done and buy produce at the same time, lol! I'm glad the avocado toast was a hit for you...and on German black bread, no less. It sounds so good!

Yum. We love bread and avocado like this, too. We put a slather of salad dressing on the bread and then the smooshed up avocado with lemon juice nice and thick. So good.

I can't disagree with that...we eat it as often as there's a ripe avocado ready to cut...
