Waffle Frittatas are my latest experiment in the “Can you waffle it?” category.

Waffle Frittatas. Fluffy Frittatas from your waffle iron? Eggs, potatoes, cheese and scallions come together for a hearty, quick and easy, all in one meal.

It’s not like I’m obsessed with waffling things, although I admit I have been intrigued by some of the things I’ve seen people waffle. (Warning: I shall be using “waffle” as both a noun and a verb throughout the post :) The truth is, I love waffles, the traditional ones, that is. My favorite waffle is malted and golden and crispy on the outside, moist and tender on the inside.

I had some leftover butternut squash cut up from a recipe I had made for dinner one night and I decided to roast the cubes for a future veggie side. It’s been a citrus kind of winter for me.

That’s why I decided to make these fluffy Orange Buttermilk Pancakes with Fresh Citrus Syrup.  Remember my Orange Olive Oil Cake?  That was a delicious revelation, not only for the wonderful twist of olive oil in it, but because of the fresh orange flavor.  I realized then that I don’t bake a lot of orange flavored recipes.  I don’t purposely avoid them, but I always seem to be working with other fruits.

I grew up on homemade waffles.  I loved the aroma coming from the kitchen while they baked. I loved watching the butter melt on them hot from the waffle iron, sprinkling them with powdered sugar or syrup.  Later, when I was out on my own, without a waffle maker or time to make them, homemade waffles could only be obtained in a breakfast restaurant, or maybe one of those Belgian waffle dessert places down at the shore, or if someone with a waffle maker decided to make them for me (not likely.) Cream of Wheat Griddlecakes

I’ve always liked pancakes, but growing up, I generally preferred waffles or French toast.

Don’t get me wrong, I never complained when we had pancakes for breakfast, but they were fluffy pancakes and fluffy pancakes weren’t my favorite since they always seem to need so much syrup.  For me, a good pancake needs almost nothing.

Of course, if we went out for breakfast, well then, it was a different story. The pancake house we used to go to had thinner, moister pancakes that were great with syrup but completely delicious without. Those were my favorite childhood pancakes.
