Caramel Apple Cider Cocktail. Apple Cider, caramel sauce, rum and ginger beer come together in this fall inspired cocktail. Perfect for fall gatherings.

Caramel Apple Fall Cocktail

Servings 2 (4 ounce) cocktails

Ingredients

For the cocktail:

  • 1/4 cup 2 ounces apple cider
  • 1 Tablespoon apple cider caramel sauce or your favorite caramel sauce
  • 1/4 cups 2 ounces dark rum (or see notes for more fun choices)
  • 1 teaspoon freshly squeezed lime juice
  • 1/2 cup ginger beer

For the garnish:

  • Chopped apple
  • Apple slices dipped in caramel sauce

Instructions

  1. Heat apple cider and caramel in the microwave just until caramel melts. This may take 10-30 seconds depending on your microwave. Stir until well combined. Pour into ice filled cocktail shaker.
  2. Add rum and lime juice. Shake until well chilled.
  3. Pour into 2 individual glasses of ice. Add some chopped apple, if desired.
  4. Top with 1/4 cup ginger beer each. Garnish with a caramel dipped apple slice.

Recipe Notes

*This recipe makes 2 (4 ounce drinks) or 1 large (8 ounce drink.)

*I went smaller with the size and lighter on the amount of rum than one might. If you want a stronger drink, feel free to adjust to your taste.

*You can substitute vodka for the rum, if you'd prefer. For either rum or vodka, choose plain or have fun with apple or caramel flavored varieties.

*Add a dash of cinnamon before serving for a little extra spice. I was tempted to do that, but decided to keep a cleaner caramel apple flavor.

*You can use any caramel sauce, but if you happen to have made my Apple Cider Caramel Sauce, it adds lots of apple flavor to the drink.

*You must use freshly squeezed lime juice. No cheating with juice out of a bottle.

*I only had regular ice cubes on hand. This would be better poured over a large ice cube; you'll get less dilution that way.
