Cilantro Lime Rice

Servings 2 cups rice

Ingredients

  • 2 cups cooked Perfect White Rice
  • lime zest optional
  • juice of 1/2 lime
  • 1/2-1 teaspoon salt
  • 3-4 Tablespoons chopped fresh cilantro
  • 2-4 teaspoons olive oil

Instructions

  1. Combine hot rice with lime juice, salt, cilantro and olive oil in a large bowl. Mix thoroughly. I like to use a silicone spatula for this job. Makes it easier to fold, toss, fluff and scrape the sides while mixing.
  2. If you like your rice with more lime flavor, scrape a bit of lime zest into the mixture before you cut the lime for juicing.

Recipe Notes

* I don't really measure for this recipe. I've given you some guidelines to get you started, but mix it up and season to taste. Start with the lower amounts and then add more based on your preferences. Salt is critical to bring out and enhance the lime flavor, so be sure to season your rice well for this recipe.

*This recipe makes two cups of rice. I always double it and adjust seasonings to taste.

*This rice, once mixed, tastes best made fresh, but can be stored in the refrigerator for a couple of days and reheated. I've tried freezing it and it doesn't fare as well as plain white rice. It's okay, but it's so much better fresh.
