Just like yesterday's post, there's no real recipe here. I'm just giving you the list of ingredients I used for the flavors I made today. Any cookie, any filling, any toppings will work. Use your imagination to make your favorite flavor combos. You can't go wrong. They'll all be delicious!
Ingredients
For the sandwiches:
vanilla/vanilla cream sandwich cookies
chocolate/chocolate cream sandwich cookies
chocolate/vanilla cream sandwich cookies
vanilla ice cream
pistachio gelato
For the toppings:
sprinkles
Andes mint chips
chopped pistachios
Instructions
You can either make and eat or make ahead and serve later. I would make them ahead to give the cookie a little time to soak up the moisture from the ice cream and to make it easier the day of serving.
To assemble a quantity of them, line a cookie sheet with wax paper and get all of your bottom cookie halves ready, whether that's plain or with a filling.
Scoop ice cream onto each bottom half. Press down to create the sandwich and to get the ice cream to push out to the edges.
Roll in desired toppings. Place back on the cookie sheet and freeze until firm.
Once frozen, you can remove from the cookie sheet and place in a zip top freezer bag to store until serving time. If you're worried about them sticking to each other, separate them with layers of waxed paper or wrap them individually.
Allow to soften a bit at room temperature before serving for the easiest "bite."
Recipe Notes
*I used Trader Joe's sandwich cookies but you can use Oreo's or any other sandwich cookie. Different brands have lots of different flavors for you to play with.
