Pumpkin, Squash and Halloween Recipe Round Up

I’m here with another recipe round up. It’s not that I don’t have another new recipe post ready for you…because I do. Well, at least the recipes and photos are done…but I thought timing wise, I should get this Pumpkin, Squash and Halloween Recipe Round Up out this week instead of next, because the clock is ticking on October and these recipes are just what you need to make right now. We’ve got no time to waste, so let’s start with breakfast, shall we?

Pumpkin Waffles with Maple Cinnamon Spiced Yogurt. Slightly crispy yet tender waffles, topped with sweet maple cinnamon yogurt and toasted pecans.

Pumpkin Waffles with Maple Cinnamon Spiced Yogurt– I love a good waffle and there’s nothing quite like one that’s been homemade. These are slightly crispy but tender waffles, and instead of syrup, I’ve gone a bit healthier and topped them with a sweet and cinnamon-y yogurt. I like to make a huge batch and freeze them. They heat up beautifully in a toaster oven so I can have an amazing breakfast ready in no time!

Whole Wheat Butternut Squash Pancakes with Whipped Maple Butter are tender, hearty yet fluffy, and perfect with a buttery sweet topping.

Whole Wheat Butternut Squash Pancakes with Whipped Maple Butter– Before you say, what?!? Butternut Squash Pancakes? Just let me say this, if you love pumpkin pancakes, you will also love these pancakes. In fact, I could probably serve these to you and call them pumpkin pancakes and you might never be the wiser. You might not even realize that they’re whole wheat. Maybe it’s because I’d catch you off guard with the Whipped Maple Butter. Or maybe it’s just because they’d taste so good :)

Pumpkin Spice Baked Oatmeal. A hearty and healthy baked oatmeal filled with traditional fall flavors. Easy to make ahead and reheat the next morning!

Pumpkin Spiced Baked Oatmeal– If you’re an oatmeal lover and haven’t yet jumped on the baked oatmeal bandwagon, now’s the time to join the movement (no pun intended lol!) This oatmeal may look like a cake but it is simply baked oatmeal. It has the texture of oatmeal but it’s less, I don’t know, wet and gloppy? And I mean that in the very best way because I love oatmeal in all of it’s forms. Eat it as is or add milk, brown sugar and pecans…yep, just like regular oatmeal! This is another recipe you can make ahead and reheat in the morning. (Same with the pancakes…are you seeing a trend here?)

Pumpkin Muffins with Nutella Cream Cheese Swirl– This was one of my first recipes I posted, created just for the blog, and I was sooooo excited. The combination of Nutella and Cream Cheese with pumpkin is out of this world and the fact that it bakes right into the top of the muffin like a built in topping? LOVE it! I thought this recipe would take the internet world by storm. But, alas, I forgot to factor in the fact that I was still in my very early food photography stages and approximately 10 people were reading the blog back then. That was then. This is now. So, consider this a PSA. There’s a pumpkin muffin storm coming on…be prepared.

Pumpkin Buttermilk Biscuits. A seasonal twist on a breakfast favorite that's lightly sweetened with maple syrup and flavored with a bit of orange zest.

Pumpkin Buttermilk Biscuits– These are based off of my beloved Fluffy Buttermilk Biscuits. They’re fluffy and full of pumpkin and spice and everything nice. A little bit of orange zest is unexpected but so, so good. And, and, and….you can make Pumpkin Biscuit Sticky Buns with this dough! Winner, winner, pumpkin buttermilk biscuit, um, uh…well…just winner :)

Brown Sugar Butter Pecan Scones. A dense, buttery, rich scone. Sprinkle with raw sugar or dip in a sweet butterscotch glaze.

Brown Sugar Butter Pecan Scones– I still haven’t perfected the pumpkin scone of my dreams, so this amazing fall flavored scone is going to step in as my ode to fall in this category. It’s gotten RAVE reviews from family and readers alike. It’s a buttery, dense scone, full of pecan nuttiness, absolutely wonderful dipped in a butterscotch glaze but just as delicious baked with a sprinkling of coarse sugar.

Peanut Butter Cut Out Cookies. A delicious roll and cut peanut butter cookie, topped with a sweet icing and decorated with melted chocolate.

Peanut Butter Cut Out Cookies– We make these cookies Every. Single. Year. I’ve been making them since I was a kid and this recipe has stood the test of time. My kids look forward to decorating these every Halloween. We’ve invited friends and family to join us in the tradition. I love that the dough is easy to roll out. I love that this is a switch up from a traditional sugar cookie recipe. I love the combo of the icing and peanut butter cookie with just a hint of chocolate used to decorate them….unless you’re my son. He’s the one that piles as much as he can onto his cookies. Lots of chips, lots of chocolate. Halloween Brownie Bark. A thin, crispy, chewy brownie is a perfect base to bake a festive treat using your favorite Halloween candy!

Halloween Brownie Bark– This is a twist on one of my favorite brownie recipes, Brownie Bark. Super easy to mix up, spread on a sheet and bake. They’re crispy. They’re chewy. They’ll satisfy your chocolate craving. I just topped this version with assorted Halloween candy, sprinkles and some googly eyes. I know. The eyes are the best, right?

Free Halloween Bingo Download– Not a recipe, but perhaps a life saver if you’re entertaining a bunch of kids. There are 20 unique cards in fun fall colors. Most downloads will only give you 4 or 8 unique cards, so because I’m me, and I didn’t want so many kids with the same card, my husband helped me create one with 20 cards that were different. Trust me, when you’re trying to keep a group of 20+ kids occupied and having fun during a fall festival party, it’s better when five kids don’t have exactly the same card. I love using this game while the kids are eating snacks; it keeps them busy and it’s not hard to play while eating. Plus, if you use game pieces like candy corn, pretzels or popcorn, then the game pieces just become part of the snack (whether you want them to or not :)

Pumpkin Pie Milkshake– We’re dipping back into some old photography here again, but seriously, did you know that a pumpkin pie milkshake could be so easy? Throw some ice cream, milk, canned pumpkin, spices, and some brown sugar into a blender and color me happy. If you love pumpkin ice cream, you’re gonna love this shake!

Roasted Butternut Squash Bacon Pasta is fall comfort food at its best! Creamy, cheesy mini penne is topped with roasted butternut squash and crispy bacon.

Roasted Butternut Squash Bacon Pasta– This was my gateway into butternut squash pasta dishes. It’s like macaroni and cheese times 10! Creamy, cheesy mini penne is topped with roasted butternut squash and crispy bacon. I’ve been making it for years and it is fall comfort food at it’s best!

Butternut Squash Macaroni Skillet– If the last recipe was the gateway to butternut squash pasta dishes, this is the neighborhood I eventually moved into. It’s not like a super creamy pasta dish, and yet it tastes super creamy and buttery and amazing. The butternut squash keeps everything moist, the fontina cheese is perfect, the browned butter sage crispy topping? Everyone fights over it. It makes a ton, which means I don’t have to cook dinner the next day. The only thing that could make this better? Bacon :)

Donna, I don't know what happened to those links, but I've gone back and recreated them. They've been tested again, so you should have no problem finding those recipes. Also, you can always use the search box on the site to get to any recipe. I hope you enjoy the recipes!
