Waffle Frittatas


Waffle Frittatas are my latest experiment in the “Can you waffle it?” category.

Waffle Frittatas. Fluffy Frittatas from your waffle iron? Eggs, potatoes, cheese and scallions come together for a hearty, quick and easy, all in one meal.

It’s not like I’m obsessed with waffling things, although I admit I have been intrigued by some of the things I’ve seen people waffle. (Warning: I shall be using “waffle” as both a noun and a verb throughout the post :) The truth is, I love waffles, the traditional ones, that is. My favorite waffle is malted and golden and crispy on the outside, moist and tender on the inside.

I’m hoping this Lemon Ricotta Crumb Cake sticks out from the myriad of back to school snacks, pumpkin and apple treats that are so popular this time of year.

Lemon Ricotta Crumb Cake. The perfect marriage of fresh citrus and rich ricotta cheese, topped with a buttery shortbread cookie crumb topping!

Is there a season for lemons? I get the taste for citrus in the winter months…hmmm…and I guess in the spring and definitely in the summer too. Probably not in the fall so much? Nah…Who am I kidding? This Grilled Corn Salad has been a life saver for dealing with the deluge of veggies coming from my CSA and my garden this season.

Grilled Corn Salad. Grilled corn, tomatoes, peppers and scallions tossed with cilantro, lime, salt and pepper. Great as a salad or side dish!

Seriously, I’ve got tomatoes and corn and peppers and onions and herbs coming out of my ears! No pun intended ;) One thing I know is…if it’s not ready to eat then it’s probably not going to get eaten.

Roasted Okra. The easy way to prep this sometimes tricky vegetable. Just roast with olive oil, salt and pepper for a delicious snack, appetizer or side!

When my husband picked up our CSA box a couple of weeks ago, and it had okra in it, the first thing he said was, “So, we’ve got okra this week. Does that mean gumbo is on the menu?” Um, no honey. No gumbo.

It’s been blazin’ hot around here and the last thing I felt like making was gumbo. First, I’ve never made gumbo. The weather has been downright glorious the past couple of days. Summer camps are over, but my kids don’t go back to school for a little while yet, so I’m hanging onto the season with a white knuckled grip; I’ll deal with September in a couple of weeks. Fudgy Zucchini Brownies. A super fudgy brownie that mixes up easily in your food processor! Lower in sugar, flour and fat than many traditional brownie recipes.

To be honest, I haven’t had much of an appetite for sweets this summer. It’s just been too hot (and we’ve already talked about being under the weather for most of the season.) But, there was just something about these brownies that got to me.

It’s been a crazy summer here. We rarely get sick in this house but apparently our number came up in June and we’ve spent the better part of the summer in a constant rotation of maladies. My husband has gone scot-free (let’s all knock wood!) but the rest of us? Ugh! Emergency rooms, hospital stays, endless trips to the doctor, tests and more tests.

These Grilled Zucchini Caprese Stacks are a testament to my garden and my weekly CSA box.

Grilled Zucchini Caprese Stacks. Thick, meaty slices of zucchini are grilled then stacked with hearty slices of tomato and fresh mozzarella. Filling enough for a main, delicious as a side or pop it onto a bun for a delicious veggie sandwich!

I’ve talked about the fact that this is my first summer with a CSA. It’s both wonderful and a little stressful. I hate wasting food, so as soon as I pick up the box, I feel like the clock is ticking. Before I know it, a week has passed and it’s time for another box.
