Mini Ice Cream Cookie Sandwiches Part 2

This is Part 2 of Mini Vanilla Ice Cream Cookie Sandwiches continued from yesterday’s post.

For that post, we used vanilla wafers for all of our flavor creations. The cookies were a blank canvas that we could add almost anything to in so many delicious combinations. Today, we’re using cream filled sandwich cookies to make Mini Ice Cream Cookie Sandwiches.

The cream filling gives us a head start on the flavor combo and chances are, you don’t have any cream or fudge filling just hanging around your pantry. These are the perfect cookies to build our next flavor creations.

I’m using three kinds of cream filled cookies, vanilla filled with vanilla, chocolate filled with vanilla, and chocolate filled with chocolate. We’re going to make some popular classic flavors first, very kid friendly, then move in a slightly different direction.

I’m really excited about the first one, mostly because I didn’t even think of it before I bought the ingredients. It just dawned on me while I was assembling them that they were a perfect replica of a favorite flavor. Birthday Cake Mini Ice Cream Cookie Sandwiches!

I love birthday cake ice cream and these little lovelies have all the flavors to make that happen! The golden vanilla cookie serves as the cake and the cream filling makes for a perfect “frosting.” Add a mini scoop of vanilla ice cream, press the top on, then take that sandwich for a dip in some rainbow sprinkles and you’ve got yourself a delicious and party ready treat.

When I looked at the chocolate sandwich cookie with the vanilla cream filling, it was a fait accompli. These were destined to be Cookies and Cream Mini Ice Cream Cookie Sandwiches!  Once I sandwiched some vanilla ice cream in those, I decided to brighten them up a bit with some sprinkles.

I don’t need to tell you that these taste exactly like cookies and cream ice cream, because they ARE cookies and cream ice cream…just in sandwich form.

Then, I crushed up some cookies so that I could also roll them in cookie crumbs.  I added a bit of blue sprinkles so the sandwich didn’t fall completely into black cocoa darkness.  Not that I would complain about that, but I love how the blue color just pops off that deep dark background.

It was time to move on to the chocolate/chocolate filled cookie.  This one had a creamy fudge filling.  I wanted to go basic for a few of them and just play the vanilla ice cream against the chocolate fudge. But I had sprinkles nearby, so I went with it and dressed them up a little.

Then, I had some Andes Mint Chips in my pantry, and while I lamented that I didn’t buy some mint chocolate chip ice cream, I thought dipping the little sandwich in the minty chips would get the flavor across nicely. Yep…perfect.

Now, I did have something in the green family in my freezer, but it wasn’t mint chocolate chip.  It was pistachio gelato.  Aaaand, I had pistachios!  I used my handy dandy little food chopper again to chop up the pistachios into little bits.

Mini sandwiches like mini bits. I ended up with a delicious little nutty fudgy ice cream sandwich that was just a bit more sophisticated than its sprinkle wearing friends.

I realize that there’ve been no real recipes and no baking for the past two posts.  And I realize I’ve been entirely TOO excited over the infinite possibilities of mini ice cream cookie sandwich flavor combos…but just imagine all the different flavors of ice cream…coffee, salted caramel…how about fruity combos (lemon cream or strawberry and chocolate or, or, or strawberry shortcake!)

Or, candy inspired combos? Use different kinds of cookies…dip them in melted chocolate. Really there are no limits. Use the flavors of your favorite dessert. Because everything is ready to go for you, you don’t need to spend any time actually baking anything.  All of your time can be spent on dreaming up the next creation.

You can get as sophisticated or as simple as you want to with these. (Make sure you check out yesterday’s post for even more ideas made with vanilla wafers.) It’s mix and match heaven. Use good quality ingredients and you’ll end up with delicious treats.

As I write this, the ideas are making my head explode.  Seriously.  I want to make aaallll of them and take photos of them (if only the ice cream wouldn’t melt so quickly) and come up with cool names for each one.

Here’s a couple I thought up for the flavor combos from yesterday’s post…how about “Coco-nutella” or “Toffee de Leche”?  (I know.  I might need therapy, lol!)

I didn’t even get really crazy with these.  I just covered the basics with a twist here and there.  Of course that just means the foundation is laid, right?  I’ve done two posts in a row about these…but now that we have the basics covered…

Mini Ice Cream Cookie Sandwiches Part 2

Just like yesterday's post, there's no real recipe here. I'm just giving you the list of ingredients I used for the flavors I made today. Any cookie, any filling, any toppings will work. Use your imagination to make your favorite flavor combos. You can't go wrong. They'll all be delicious!

Ingredients

For the sandwiches:

  • vanilla/vanilla cream sandwich cookies
  • chocolate/chocolate cream sandwich cookies
  • chocolate/vanilla cream sandwich cookies
  • vanilla ice cream
  • pistachio gelato
  • For the toppings:
  • sprinkles
  • Andes mint chips
  • chopped pistachios

Instructions

  1. You can either make and eat or make ahead and serve later. I would make them ahead to give the cookie a little time to soak up the moisture from the ice cream and to make it easier the day of serving.
  2. To assemble a quantity of them, line a cookie sheet with wax paper and get all of your bottom cookie halves ready, whether that's plain or with a filling.
  3. Scoop ice cream onto each bottom half. Press down to create the sandwich and to get the ice cream to push out to the edges.
  4. Roll in desired toppings. Place back on the cookie sheet and freeze until firm.
  5. Once frozen, you can remove from the cookie sheet and place in a zip top freezer bag to store until serving time. If you're worried about them sticking to each other, separate them with layers of waxed paper or wrap them individually.
  6. Allow to soften a bit at room temperature before serving for the easiest "bite."

Notes

*I used Trader Joe's sandwich cookies but you can use Oreo's or any other sandwich cookie. Different brands have lots of different flavors for you to play with.

Ramona - What a great way to customize ice cream sandwiches! I don't think I know anyone who doesn't like some type of oreo. :)

Between the cream filled sandwich cookies (oreos, joe joes or your favorite brand) and the vanilla wafers from the post the day before, it's pretty easy to please everyone. Even plain vanilla wafers with vanilla ice cream are delish!
