This is one of our favorite fall comfort food meals.
I’ve been making this Butternut Squash Macaroni Skillet ever since I discovered it on Jessica’s blog three years ago. I made a few slight changes that I mentioned in my 2012 comment on her blog and after making it so many times, I felt that I just had to share it with you. I’ve tried a few times to get it shot to share, but I either ran out of time or once, I was just too sick to go through a photo shoot. I actually started shooting some of the steps, but I barely felt well enough to make… Continue reading
I love an easy week night dish.
Usually my go to if I don’t have time or don’t feel like getting too involved with cooking is a simple plate of pasta with steamed vegetables and freshly grated cheese. This is a great idea for a simple dinner.
Not all recipes need long lists of ingredients to be good. Sometimes you just need to be inspired by a good idea, or reminded of something that you’ve made before. This Roasted Vegetable Pasta is one of those recipes. Just a simple, easy, delicious idea.
I find that my favorite recipes are ones that are simple, use quality ingredients, and are then combined to make a delicious dish. When I see a photo of a dish that looks amazing, then review the recipe and see that it is very easy, my eyes light up and it… Continue reading

Mediterranean Pasta with Rosemary Scented Prosciutto. Sounds fancy, doesn’t it? At our house it’s only ever been called, “Jenny’s Pasta,” because we discovered it while visiting my sister, Jennifer. We drove in from out of state along with other family members and one night, after a day out with all the parents and kids, my sister offered to make dinner. She said all she needed to do was stop by the grocery store for a box of pasta. Of course, I was thinking, what could she be making for our large group where she needed… Continue reading
Look what I made for you today! And it’s not dessert either…
But it’s so good, you won’t mind the absence of chocolate or other sugary treat. I made it with our own organic squash that we grew in our garden. Well, “we,” meaning my husband ,who planted and watered and tended and harvested it. “We” grew two small butternut squash. Just two, but we celebrated our success just the same. And then it was time to make something wonderful with our two little squash.
So I found a recipe that I haven’t made in a long time and I don’t know why, because it is over the… Continue reading
