It’s been a crazy summer here. We rarely get sick in this house but apparently our number came up in June and we’ve spent the better part of the summer in a constant rotation of maladies. My husband has gone scot-free (let’s all knock wood!) but the rest of us? Ugh! Emergency rooms, hospital stays, endless trips to the doctor, tests and more tests.

Luscious Lemon Curd. Is there anything better?
I mean, besides caramel and hot fudge and cake and brownies and….well, let’s just stay in the land of lemons for today. I love lemon squares and lemon cakes and lemon cookies and lemonade, but whenever I have some homemade lemon curd sitting before me, I always feel like it crushes all the other lemon treats out there. Breaking news! I tried rhubarb and I liked it!
How is it that I’ve gone my entire life without tasting rhubarb? I’ve always wanted to…I guess the opportunity simply never presented itself. It’s not like you see rhubarb on many menus. How do you feel about lemon desserts?
I don’t think I’ve ever met one that I didn’t like. Actually, my fondness for lemon is not just about desserts. I love the freshness of lemon in an ice cold beverage and I love that squeeze of lemon on top of seafood or other savory dishes. Then, of course, I love lemon curd on top of everything. When you read the title, “Caramel Apple Pie Cheesecake Dip” you pictured a bowl of dip with some dippers on the side. You know I’m right. (Or maybe you were completely distracted by the amazing giveaway?) Either way, this dip actually looks like a real dessert…it’s almost…fancy :) Maybe not “fancy” fancy, but perhaps “rustic” fancy? One look at it and you can see that it’s a dessert dip that’s fancy enough to hang out (or stand out) with the rest of the dessert table.

Galette, crostata, galette, crostata…
Tomato, tom-ah-toe? With my Blueberry Galette, I was channeling my French roots. I thought I’d give a nod to my Italian roots with these Caramel Apple Crostatas. Galettes and crostatas are essentially rustic free form pies. In baker speak, that means less stress to me. It doesn’t have to be perfect, just roll out your dough and top with some sweetened fruit and fold up the sides. Couldn’t be easier, right? Unless you’re going to fret over making pie dough, but there’s no need for that.

Ice Box Raspberry Chocolate Chip Cheesecake! I love a good ice box dessert. The first time I was introduced to the idea of an ice box dessert was as a kid. I’m sure many of you have had those layered graham cracker with pudding “eclair” desserts where layers of graham crackers absorb the moisture from your pudding/filling of choice and soften into a kind of cake like treat? It’s July, so I decided to make a pie.
Actually, I made a Blueberry Galette. And I didn’t really make it because it’s July, but because a good friend texted me a picture of a couple of berry galettes she made last week and I instantly became obsessed with making one. Of course, that text coincided perfectly with the fact that organic blueberries are currently abundant and well priced at my grocery store and therefore, currently well stocked at my house.
