I thought you might like some pie, but packaged a little differently.

Pumpkin Pie Shortbread Bars. Instead of making a traditional pie crust, bake your pumpkin pie on top of a layer of tender shortbread.

But first, can we talk about this super cute pumpkin? (No, the pie isn’t in the pumpkin, although that’s a fun idea!) I’ve been crazy over this little pumpkin ever since I picked it (and it’s brother :) up at a fall festival a few weeks ago. I love the little yellow speckles and the long rebel stems that have a mind of their own. It’s been a crazy summer here. We rarely get sick in this house but apparently our number came up in June and we’ve spent the better part of the summer in a constant rotation of maladies. My husband has gone scot-free (let’s all knock wood!) but the rest of us? Ugh! Emergency rooms, hospital stays, endless trips to the doctor, tests and more tests.

Georgia Peach Cobbler. Fresh peaches, lightly spiced and sweetened with two kinds of sugar, are baked under a delicious sweet biscuit topping!

Recently the Georgia Peach Truck came to town and I dutifully lined up to buy some peaches. I had read about these peach trucks and was excited to take advantage of the fact that one was going to be in my neck of the woods. (This was one of those rare times when I stepped away from buying organic stone fruits and let these sweet peaches from Georgia take precedence.)

Tomato, tom-ah-toe? With my Blueberry Galette, I was channeling my French roots. I thought I’d give a nod to my Italian roots with these Caramel Apple Crostatas. Galettes and crostatas are essentially rustic free form pies. In baker speak, that means less stress to me. It doesn’t have to be perfect, just roll out your dough and top with some sweetened fruit and fold up the sides. Couldn’t be easier, right? Unless you’re going to fret over making pie dough, but there’s no need for that.

Actually, I made a Blueberry Galette.  And I didn’t really make it because it’s July, but because a good friend texted me a picture of a couple of berry galettes she made last week and I instantly became obsessed with making one.  Of course, that text coincided perfectly with the fact that organic blueberries are currently abundant and well priced at my grocery store and therefore, currently well stocked at my house.
