Chocolate Whipped Cream Cream Cheese Frosting-13And yes. It is getting it’s very own post. If you’ve tried Whipped Cream Cream Cheese Frosting, you know what all the buzz it about. That frosting is our number one favorite frosting and is almost always requested as THE frosting everyone wants for their birthday cake. It’s the frosting that’s not too sweet. We are not fans of super sugary frosting. I, personally, just scrape it off if it’s too sweet for me. Not with this one.

I’d always made zucchini cake as a chocolate cake and reserved non-chocolate zucchini flavors for breads and muffins. I’m sure it had something to do with camouflaging those green flecks within a deep dark chocolate cake so that no one would be the wiser. At least that was going philosophy when I was young and “zucchini cake” sounded like an oxymoron.

Today I’m delivering. This is the recipe for the Whipped Chocolate Frosting I used on the Pac Man cake from last week’s Flashback Friday.  For those of you who’ve been following me for awhile, you know that I’m not a fan of frosting that is too sugary (I’ll scrape it off), or too buttery (I’ll scrape it off), and I’m definitely not a fan of crusting butter creams (forget about it.)

I finally baked beer in a cupcake and I LOVED IT!  I made Chocolate Stout Cupcakes filled with Irish Cream and wow, they are something special. For years now, I’ve watched others make many versions of this cupcake around St. Patrick’s Day.  And like so many other recipes, this has been filed away as an idea to try “someday.” Well, that day has come. Well, I could say that my husband walked into the room after this shoot and offered to eat this whole dish of Whipped Cream Cream Cheese Frosting.  He thought it was an ice cream sundae.  When I told him it was all frosting, and that I was just using the dish as a prop,  he politely reneged and decided to go grab a spoon and get a much smaller sample from what was left in the mixing bowl.

This was a birthday cake for someone special.

Someone who loves peanut butter and chocolate desserts and who can pretty much be counted on to choose that flavor if we are standing before a case line of 20 kinds of cupcakes. And since he grew up in Philly, I guess this could also be a nod to Tasty Kake’s Peanut butter Kandy Kake (which we don’t generally eat because they have trans fats in them. I know. No fun.)
